You can make graphs and pie charts somewhat automatically from your data input and then modify them to suit your aesthetic idea.
There is a tool on the tool bar.
See the darkened tool at left- below. Control click to select the kind of graph you want to use.
The graph comes up. Fill in the data. If you type in words below, the words will show up as a key.
Add color by dragging the color into your wedges
You can just click on the color swatch and drag it into your shape
to get more color choices, type "Pantone" into the search bar at the top of the screen in Illustrator and open up Pantone swatches
